A white wine specialist, the Domaine Guissani Paoli has been producing Vermentino and Niellucciu (Sangiovese) Cru wines in the Cap Corse since 1912. The domain is a pioneer in organic and biodynamic farming in Corsica : the vines are cultivated and shaped by hand on clay schist soil that lays on sedimentary limestone mother rock. The grapes are then individually screened, selected and squeezed and the juice is extracted only using gravity, after which they are matured for a long period in vats. Their product range includes the Grand Blanc Cru AOC Patrimonio and Rivages de Farinole Red, White and Vendanges Tardives.
