The history of the Castan Distillery starts in 1941, when the Castan family started visiting villages in the Tarn and Averyon areas with a mobile still. With this traditional knowledge passed down through generations, Sebastien, the current distiller, built a whisky distillery in 2007, making it the first such establishment in the Occitane region. The first Vilnova whiskeys were distilled in 2010 and are produced as limited editions with unique characteristics. The result is a copper-colored liquid with aromas of spice, almond, cocoa and hazelnut. Castan Distillery handled production from start to finish: growing the grain, brewing, fermenting and distilling on-site.
